Pistachio-pumpkin chocolate loaf

The different flavors of this loaf make it special enough for a holiday or when company's coming for dinner. very moist and dense cake-like bread.

Ingredients

1 c
dried cranberries
1 box
german chocolate cake mix
1/2 c
pumpkin puree
1 tsp
orange extract
1/2 c
unsalted, chopped pistachios

Step-By-Step

1Heat oven to 350. Spray { 2 } 8-1/2" x 4-1/2" loaf pans w/ cooking spray. Place cranberries and enough water to cover in a microwave safe bowl. Let sit for 5 mins, drain.
2Microwave cranberries 2 mins, or until softened. In bowl, mix cake mix as directed on box. Add pumpkin puree and orange extract. Stir in cranberries and pistachios.
3Divide batter evenly between loaf pans. Bake 50 mins, or until a toothpick inserted in center comes out clean. Let cool.
