Pineapple Spice Cake

This cake was so easy to make and it looks great. It's moist and very good with this spicy orange cream cheese frosting.
Amazing what you can come up with things in the pantry.

Ingredients

CAKE
18 oz
duncan hines signature spice cake mix
1 c
all purpose flour
3 large
eggs
20 oz
can crushed pineapple drained,juice reserved -3/4 cup
1/3 c
vegetable oil
3/4 c
pineapple juice, from above
1/2 c
chopped nuts
1/2 c
coconut flakes
FROSTING
8 oz
cream cheese
1 c
powdered sugar
1/2 tsp
ground cinnamon
2 Tbsp
orange jelly

Directions Step-By-Step

Heat oven to 350^. Spray an 9x13-inch cake pan with nonstick cooking spray. Drain crushed pineapple to make 3/4 cup juice. Set aside.

Combine the cake mix, flour,eggs, oil and pineapple juice. Beat at medium speed for 2 minutes. Stir in pineapple, coconut and nuts with a wooden spoon. Pour into prepared pan.Spread evenly.

Bake for 35 minutes or until toothpick inserted into center comes out clean and cake is beginning to pull away from sides. Cool completely on wire rack.

FROSTING:
Beat together cream cheese, powdered sugar and cinnamon, add enough orange jelly until of spreading consistency, beating well to blend. Spread over cooled cake..cover and refrigerate cake.

Pat, love this! It was a nice change of pace from the usual spice cake/cream cheese frosting. The pineapple, coconut, pecans (I used pecan chips) gave it lots of flavor. I didn't have orange jelly, but used apricot and this was still delicious- my family really liked it.

You just reminded me what else I brought back with me muffin tins, mini muffins tins and cookie sheets:) My husband thought I was nuts. So I told him I don't get the opportunity to travel to Toronto, Canada and Buffalo, N.Y very often:)
