Ingredients

  • CAKE:
  • 1 box white cake mix
  • 1 sm box instant vanilla pudding mix, dry
  • FILLING:
  • 1 tablespoon instant tapioca powder
  • 1 pineapple, peeled, cored & quartered, divided
  • 1/2 cup sugar
  • 1/2 cup dark rum
  • 1/8 teaspoon salt
  • 2 tablespoons butter, unsalted, room temperature
  • FROSTING:
  • 2 sticks + 2 tbsp butter, unsalted, room temperature
  • 3 tablespoons coconut milk (found by alcohol mixers)
  • 2 teaspoons pure vanilla extract
  • 1/2 teaspoon coconut extract
  • 1/8 teaspoon salt
  • 2 1/2 cups confectioners' sugar
  • GARNISH:
  • 1 cup coconut, sweetened, toasted

How To Make pina colada cake

  • Step 1
    THE DAY BEFORE SERVING... CAKE: In stand mixer, add cake mix & pudding; stir to combine. Add remaining ingredients according to box directions & bake in 2 - 9" cake pans.
  • Step 2
    THE DAY BEFORE SERVING... FILLING: Grind tapioca to a fine powder in a spice grinder, 30 seconds. Coarsely chop 2 pineapple quarters, then pulse in food processor, 8 - 10 pulses (after pulsed you should have 1 1/2 C worth). Slice one of remaining pineapple quarters into 1/8" thick slices & reserve in refrigerator for garnish. Transfer ground pineapple to medium saucepan & add sugar, rum, ground tapioca & salt. Bring to boil over medium heat & cook until thickened, 4 minutes. Turn off heat, stir in butter until combined. Transfer to bowl & refrigerate 24 hours.
  • Step 3
    THE DAY OF SERVING.... FROSTING: In stand mixer with whisk, add butter, coconut milk, extracts & salt on medium speed until combined. Slowly add confectioners' & continue to whip until smooth, 2 minutes. With spatula, scrape down sides of bowl. Increase speed to medium high & whip until fluffy, 5 minutes. Meanwhile, toast coconut.
  • Step 4
    ASSEMBLY: Place 1 layer of cake on decorative plate. Spread filling evenly over top. Top with 2nd layer of cake on top & press lightly to adhere, spread frosting evenly over top & sides of cake. Gently press coconut onto sides of cake. Fan pineapple slices in circle around top edge of cake & enjoy!
