I love pina colada's and coconut..so this cake is one of my very favorites! And I actually combined 2 different recipes..one for the cake and a different one for the frosting..to make the ultimate pina colada cake :)
Prepare the cake as directed on package, adding can of coconut to the batter. Bake in a greased and floured 13X9 pan. When cake is done, remove from oven and punch deep holes in cake with a fork. Pour cream of coconut into holes. Let sit until cool before icing.
For frosting, mix dry pudding mix and pineapple, then add cool whip. Frost cooled cake and sprinkle with shredded coconut if you want and refrigerate until serving.
