My grandmother made this a lot. It made an appearance at a lot of family gatherings. I've only seen two other recipes on here for this, and they are both different than this, so I decided to post this one. This is GOOD! If you want something yummy and refreshing, this is it! The possibilities with this cake are endless, as you can use a variety of fruit and pudding flavors in this cake. Have fun and enjoy! **Prep time includes time to frost a 3 layer cake. To make it faster and easier, make it in a large glass casserole dish instead. My grandmother did it that way most of the time.**

Ingredients For pig pickin' cake

  • 1 sm
    package instant pudding
  • 1
    cake mix
  • 3/4 c
    oil
  • 4
    eggs
  • 1 can
    mandarin oranges, drained and chopped (or other fruit of your choice)
  • FOR FROSTING:
  • 1 lg
    container cool whip
  • 1 sm
    package instant pudding
  • 1 can
    crushed pineapple, (or fruit of your choice, chopped), including juice

How To Make pig pickin' cake

    Mix all ingredients together well. Bake in 3 (8 inch) greased and floured cake pans. Bake at 350 degrees for 15-20 min., or until done. (If using large glass dish instead, increase baking time by 20 to 30 min., or until cake is done.)

    For Frosting: Mix ingredients together well. Frost cake when cooled and refrigerate until completely chilled prior to serving.
