personal pineapple upside down cupcakes made easy

- 2 cups flour, 11/2cups sugar, 1 packet vanilla pudding,4 lrg. eggs, 1 teaspoon vanilla, 1 teaspoon baking powder, 1/2 cup olive oil, about a cup of whole milk, 1 jar marchino cherries, 1 lrg. can sliced pineapple.
- 12 count cupcake pan for large cupcakes, sprayed with pam cooking spray.
1mix the first 8 ingredients in lrg mixing bowl onhigh with electric mixer until all ingredients are perfectly incorperated together. batter should never be thin. if batter is thin add a little flour at a time to thicken batter. you can always add but can't take away. place pineapple sleces in cupcake pan place cherrie in middle of pineapple. if you don't have a lrg. cupcake for lrg cupcakes piese pineapple tidbits in a circle in cupcake pan and place cherries in middle. place in a 350 degree oven that has been preheated for at least 20 mins. place on bottom rack for about 20mins or until a toothpick comes out clean. let cool.
