I have been offered money for this cake. I don't know what makes it so special and I do it differently every time, just like I do everything. It's been with me for years and it's actually my own by now cause I have revised it so much. My church gals love it and so does everyone I've known. Cook with love, that's my only secret I think!!

Ingredients For perfect carrot cake

  • 3 c
    carrots, shredded (baby or not) put aside
  • 4 EGGS BEATEN SEPARATELY (PUT ASIDE) DON'T FORGET THEM
  • 1 1/4 c
    oil, you can use less, put pinn.juice(little)
  • 2 c
    sugar(white granulated)
  • 2 c
    all purpose flour
  • 2 tsp
    cinnamon, nutmeg or any other(pumpkin)
  • 2 tsp
    baking soda
  • 2 tsp
    baking powder
  • 1/4 + c
    any preferred nuts (alm.waln,pecans)
  • 1/4 + c
    raisons, cranberries , pinneapples
  • 1/4 tsp
    extract (almond, vanilla, rum,cranberry ..any)

How To Make perfect carrot cake

    I shred the carrots with salad shooter and set aside in small bowl. then I just do the sugar and oil then add the beaten eggs, then flour with sodas, then have fun with the spices, then the goodies and then add the carrots last thing. But..if you forgot something go ahead doesn't really make a difference. Stir it up well.

    OOPs!!Oven at 350 first thing!(13x9 pan, or tube or angel food cake pan) I'm so picky huh?? Old recipe said 1 hour, I check it at 1/2 or 45 min. use the toothpick trick.(life just got fast all over the kitchen) take it out and let it cool on cooling rack. make the icing.( 13x9 pan, or tube or angel food cake pan.

    Icing; soften cream cheese (8oz), put a couple Tbsp. of butter or marg. mix it with blender and if you want and add the cream cheese with a tsp. or so of vanilla extract or almond,etc. beat that in and then slowly add the confectioners powder sugar (about 1/2 to 1 whole box) just until you have enough. You can use a little milk, just don't add dry and wet ingredients together. Regular cream cheese icing. Sometimes I get wild and add some nuts on top again or more and more extract and color sometimes, light orange with trimmed oranges or cranberries or blueberries on the top depending on the season. I would do oranges and cranberries during Christmas. Or make some icing carrots! Or do nothing and it's all good.

    Think before hand, what spices and season it is. I use nutmeg, cinn. or pumpkin spice. If you use cranberries one of my tricks is to use fresh frozen, add sugar on them and put them in frig. so whenever you use them they are a little sweet. Also for pineapple lovers you can put a little juice in the icing mixing it up during the wet parts. It's easy to make it delicious and you decide what way to do it, do it your way and have fun!!
