This is a recipe off my Kitchen Towel..and I was asked by another JAP member if I would post this recipe so she could see it better...so here it is. Enjoy!!!

I have no idea who to give credit to for this recipe as there is no name on the kitchen towel...

Ingredients

1 1/2 c
all-purpose flour
1 tsp
baking powder
1/4 tsp
salt (i use sea salt)
1/2 c
whole milk
1 tsp
vanilla extract (i use my homemade vanilla)
1 tsp
peppermint extract
1/2 c
unsalted butter
1 c
sugar (i use stevia, splenda or truvia)
1 large
egg
2
egg whites

Step-By-Step

1Whisk together flour, baking powder and salt; set aside.

2Cream butter with mixer until light and fluffy.

3Slowly add sugar.

4Add egg and egg whites until blended.

5Add half the flour mixture; mix until just blended.

6Add milk mixture; mix until just blended.

7Slowly add remaining flour mixture.

8Pour evenly into paper-lined muffin tins.

9Bake for approx. 25 minutes.

10Transfer to wire rack and let cupcakes cool before icing.

11NOTE by CinStraw:
I frost these with a peppermint flavored glaze and top (garnish) with crushed peppermint candy.

ALSO THE RECIPE ON THE TOWEL DOES NOT GIVE AN OVEN TEMPERATURE TO BAKE THESE CUPCAKES....SO, I'M ADDING THAT YOU BAKE IN A "PREHEATED 350°F OVEN".
