When I worked for Sara Lee, we used to have pot luck dinners. A friend of mine used to make this & she gave me the recipe & I made it after that. Haven't made it in a while though.

Ingredients

1 stick
butter
2 c
sugar
2 c
all purpose flour
1 c
buttermilk
1 small
can coconut or 1 1/2 cups
5
egg yolks
5
egg whites, stifly beaten
1/2 c
shortening
1 tsp
baking soda
1 1/2 tsp
pure vanilla
1 c
chopped nuts-pecans

CREAM CHEESE FROSTING

8 oz
softened cream cheese
1/2 stick
softened butter
1 box
powdered sugar- (16 oz.)
1 1/2 tsp
pure vanilla
chopped pecans

Step-By-Step

1CREAM BUTTER & SHORTENING. ADD SUGAR & BEAT UNTIL MIXTURE IS SMOOTH.

2ADD EGG YOLKS & BEAT WELL.

3MIX FLOUR, SALT & SODA. ADD TO CREAMED MIXTURE ALTERNATELY WITH BUTTERMILK.

4STIR IN VANILLA, COCONUT & NUTS.

5FOLD IN EGG WHITES. POUR INTO 3 GREASED & FLOURED 8" CAKE PANS. BAKE FOR 25 MINUTES OR UNTIL DONE. COOL & FROST.

6FROSTING:

7BEAT CREAM CHEESE & BUTTER UNTIL SMOOTH. ADD SUGAR & MIX WELL. ADD VANILLA & BEAT UNTIL SMOOTH. SPREAD ON CAKE & SPRINKLE NUTS ON TOP.
