Peanut Butter Cake With Chocolate Frosting

Ingredients

1 c
all purpose flour
1 c
plus 2 tablespoons sugar
3 1/2 tsp
baking powder
1 tsp
salt
2 c
graham crackers, crushed
3/4 c
peanut butter
1/2 c
shortening
1 c
plus 2 tablespoons milk
1 tsp
vanilla extract
3
eggs

FOR THE FROSTING:

2 c
confectioners' sugar
2 Tbsp
cocoa powder
8 Tbsp
water
1/3 c
heavy cream
1/2 c
peanuts, salted
2 tsp
vanilla extract

Step-By-Step

1Preheat oven to 375 if baking with metal dish, 325 if using a glass dish.
2Sift flour, sugar, baking powder and salt together. Add graham cracker crumbs, peanut butter, shortening, milk and vanilla.
3Beat mixture with electric mixer on low until moistened and then heat on medium for 2 minutes.
4Add eggs and beat 1 minute. Bake in greased 9x13 inch baking pan for 30-35 minutes. Do not remove from pan to cool.
5For frosting, mix all ingredients together. Pour into a saucepan and bring mixture to a boil.
6Boil for 1 minute. Cool slightly.
7With a wooden spoon handle, poke a few holes in the cake and then pour the warm frosting over it.
