    crushed peanut brittle, divided
  • 1 box
    yellow cake mix
  • 1 c
    water
  • 1/2 c
    vegetable oil
  • 3
    large eggs
  • 3/4 c
    dark brown sugar
  • 1 c
    creamy peanut butter
  • 3/4 c
    cubed cream cheese
  • MALTED CARAMEL FROSTING
  • 1 tube
    frozen whipped topping, thawed
  • 8 oz
    cream cheese, softened
  • 1/2 c
    half and half
  • 4 Tbsp
    malted milk powder
  • 1 c
    caramel ice cream topping

How To Make peanut brittle cake with malted caramel frosting

    Preheat oven to 350 degrees F.

    To make the cake, coat a 13-x 9-x 2-inch baking pan with cooking spray. Add 1 cup crushed peanut brittle and sprinkle with brown sugar; mix well.

    In a large bowl, combine cake mix, water,v egetable oil, eggs and brown sugar. Beat with an electric mixer on high for 3 minutes. Add peanut butter and cubed cream cheese.

    Beat again at low speed for 40 seconds until blended.

    Pour into a prepared baking pan. Add 1 cup crushed peanut brittle and press down with a spoon.

    Bake for 30 minutes or until a toothpick inserted the center comes out clean. Cool completely for 5 minutes.

    To make the malted caramel frosting, combine all ingredients in a medium bowl. Whisk together for 3 minutes until blended. Set aside.

    Spread the frosting onto the cake and sprinkle with remaining crushed peanut brittle.
