I've made this cake three times now, yesterday twice as while the first was in oven, about 1/2 baked, the power went off grrrrr. So decided to redo it as it's for guests tonight. I am wondering and would love if someone else would respond. Is it just me? this makes a very dense cake. I'm guessing it's because of the 1 egg? and low amt of margarine (yup I used marg sorry ;) I cut up the first one, which surprisingly did bake, but looked funny.....am going to make a trifle with it.

The taste is great...put more vanilla if you like. Also as I don't have 8" pans, I made one 9" and for my redo made it in one of those pans with the concave bottom, that when turned over holds berries....can't wait to try it tonight!

This brings back so many happy memories of my childhood.

Pinched and I plan to use white frosting with coconut, just the way my mother used to make on our birthdays.
