This recipe was my grandmothers,my mother made this one-egg cake when we were little. This cake was made only when one of her (11)children had a birthday. It made us feel special, being just like all the other kids.
I make this cake, because its easy and quick to make.

pinch tips: How to Core a Head of Lettuce


2 c
cake flour
2 tsp
baking powder
1/4 tsp
4 Tbsp
butter or other shortening
1 c
egg unbeaten
3/4 c
1 tsp
cake frosting, any flavor is great with this cake i like white frosting with coconut

Directions Step-By-Step

Add flour,baking powder, and salt mix together in bowl.
In another bowl mix together butter,add sugar, gradually cream together until blended and light.Add egg and mix.
Now add flour small amounts at a time with milk into creamy mixture once blended add vanilla.
Bake in two greased 8-inch layer pans,in moderate oven (375`F.)25 minutes,or until done

Oh my!! Just pulled this out of my oven and it looks WONDERFUL!!! I had tasted the batter and it was great so I know the flavor is going to be delicious!! I am going to use Hershey's Cocoa frosting with a bit of mascrapone. Thank you for this go to recipe!!! It is so easy going, can do anything with it. I envision it layered with fresh strawberries and fresh whipped cream frosting!!!

Thanks for recipe. It brought back so many good memories of my grandmother. She made a one egg cake & a chocolate sauce that you poured over your slice of cake. Yum!!!

This brings back so many happy memories of my childhood.

Pinched and I plan to use white frosting with coconut, just the way my mother used to make on our birthdays.

I've made this cake three times now, yesterday twice as while the first was in oven, about 1/2 baked, the power went off grrrrr. So decided to redo it as it's for guests tonight. I am wondering and would love if someone else would respond. Is it just me? this makes a very dense cake. I'm guessing it's because of the 1 egg? and low amt of margarine (yup I used marg sorry ;) I cut up the first one, which surprisingly did bake, but looked going to make a trifle with it.

The taste is great...put more vanilla if you like. Also as I don't have 8" pans, I made one 9" and for my redo made it in one of those pans with the concave bottom, that when turned over holds berries....can't wait to try it tonight!
