Ingredients For old fashioned red velvet cake

  • FOR THE CAKE
  • 1 1/2 c
    unsalted butter, softened
  • 3 c
    sugar
  • 6
    eggs, room temperature
  • 3/4 c
    sour cream
  • 1 bottle
    1 ounce red food coloring
  • 2 tsp
    vanilla
  • 3 3/4 c
    all purpose flour
  • 3/4 c
    natural unsweetened cocoa powder
  • 1 tsp
    salt
  • 1 tsp
    baking soda
  • 1 1/2 c
    whole buttermilk, room temperature
  • cream cheese icing (below)
  • FOR THE CREAM CHEESE ICING
  • 3 pkg
    8 ounces cream cheese, softened
  • 1 c
    unsalted butter, softened
  • 2 pkg
    16 ounces powdered sugar
  • 2 tsp
    vanilla
  • 1/2 tsp
    salt

How To Make old fashioned red velvet cake

    Preheat oven to 350F. Spray 3 (9 inch) round cake pans with nonstick baking spray with flour. Line bottoms of pans with parchment paper; spray with nonstick baking spray with flour. Set aside. In a large bowl, beat butter and sugar at high speed with an electric mixer until fluffy, 3-4 minutes, stopping occasionally to scrape sides of bowl. Add eggs, one at a time, beating well after each addition. Add sour cream, food coloring, and vanilla, beating to combine.

    In a medium bowl, whisk together flour, cocoa, salt and baking soda. With mixer on low speed, add flour mixture to butter mixture in thirds, alternating with buttermilk, beginning and ending with flour mixture. Beat until combined. Divide batter evenly among prepared pans. Bake until a wooden pick inserted in center comes out clean, approximately 25 minutes. Let cool in pans 10 minutes. Remove from pans, and let cool completely on wire racks. Trim tops of layers to flatten, if necessary.

    Make the cream cheese icing: In a large bowl, beat cream cheese at high speed with an electric mixer until smooth. Add butter, beating until smooth. Reduce mixer speed to low. Gradually add powdered sugar, vanilla, and salt, beating until combined. Spread icing between layers and on top and sides of cake.
