Great hit with family and friends. Moist and delicious with wonderful topping. Great one to take along for covered dish or dinner dessert.
I wanted something that added fiber to my diet and was sweet. Love the brown sugar & cinnamon flavor.

Ingredients

1 1/2 c
water, boiling
1 c
oatmeal, quick cooking
1/2 c
butter
1 c
sugar
1 c
brown sugar
2
eggs, beaten
1 1/2 c
flour
1/2 tsp
salt
1 tsp
soda
1 tsp
cinamon

TOPPING

1/2 c
butter
1/4 c
cream or milk
1/2 c
brown sugar
1 c
pecans, in pieces or chopped
1 c
coconut
1 tsp
vanilla

Directions Step-By-Step

Pour boiling water over oatmeal and let stand 20 minutes.

Cream together butter, sugars, and eggs and blend well.

Sift flour, salt, soda and add to butter mixture little at a time & blend well.

Add oatmeal and cinnamon and blend together.

Bake at 325 degrees in a 9 x 13 pan for 35-45 minutes.

TOPPING

Heat butter, cream and sugar in pan (do not let boil).

Add remaining ingredients and put the topping on cake right out of oven. Place in oven under the broiler until slightly browned. Let cool.
