this was my grandmother's
favorite cake to make for me
when I was younger,
I changed it a little but it still
reminds me of her cooking.

Ingredients

1 1/4 c
boiling water
1 c
oatmal
1/2 c
butter melted
1 c
sugar
1 c
brown sugar
1 tsp
vanilla
2
eggs
1 1/2 c
flour
1 tsp
baking soda
1/2 tsp
salt
1/4 tsp
cinnamon
1/4 tsp
nutmeg
1/2 c
coconut
1 can(s)
pineapple diced and drained
1/4 c
butter melted
1/2 c
brown sugar
1 c
coconut
1 can(s)
reserved pineapple juice from can

Directions Step-By-Step

preheat oven to 350.
In medium bowl, pour boiling water over oats, let stand for 20 minutes.

add butter, sugars, and vanilla; mix together well.
add eggs, stir til blended.

add in flour, baking soda, salt, cinnamon, and nutmeg; mix til blended.
fold in coconut and pineapple, pour into a 13x9 greased pan.

bake for 50 minutes, when out of oven poke holes into top of cake with the end of a spoon.
pour topping over cake, let cool cut into squares.

Topping:
combine all ingredients, spread evenly over cake.
