Ingredients
| 1/2 c | oil |
| 1 3/4 c | sugar |
| 2 lg | eggs |
| 1/4 c | buttermilk |
| 1/2 tsp | banana flavoring (optional) |
| 3 tsp | vanilla extract |
| 4 lg | very ripe bananas |
| 2 c | all purpose flour |
| 1/4 tsp | salt |
| 1 tsp | baking soda |
| 1 1/2 c | chopped walnuts (optional) |
| *NOTE | if nuts not used, add 2 additionsl tbls. flour |

Vivian's Notes:
We always have a banana or two that gets too ripe. I place them in the freezer. The outside turns black but the inside is fine for Banana Bread of Muffins. They also seem to have a stronger flavor, which I like. This will make two loafs or 24 muffins. As you see, I made muffins and mini bundt cakes.

Directions
Preheat oven to 375, Spray with oil and flour baking spray or grease and flour baking pans
Cream sugar and oil well
add eggs, mix well
mash bananas and add to wet mixture
Add buttermilk, and both flavorings. mix well
Combine Flour,baking soda and salt, add to wet mixture. Mix until just combined well
add chopped nuts if using them or additional flour
Pour into 2 prepared large loaf, or muffing pans
Bake loafs for about 45 min. adjust for muffins or mini cake pans. Bake until done in the center.
