This recipe came with my springform pan. First time I made it was for my youngest daughter's baby shower and it was a huge hit. Original recipe calls for graham cracker crust (which I dislike) and full fat ingredients. I used 1/3 reduced fat cream cheese, light sour cream and light butter. I also made a strawberry glaze and served light whipped cream with it although it was delicious without it. I followed mixing,baking and cooling instructions exactly and this was an amazing cheesecake.
PREP TIME DOES NOT INCLUDE TIME TO BRING CREAM CHEESE TO ROOM TEMP.
Preheat oven to 350. Grease pan. In a medium bowl mix cookie crumbs with melted butter. Press into bottom of springform pan. In large bowl mix cream cheese with sugar until smooth. Blend in milk , and then mix in eggs 1 at a time mixing just enough to incorporate. Mix in sour cream,vanilla and flour until smooth. Pour filling into prepared crust. Bake in preheated oven for 1 hour. Turn the oven off, and let cake cool in oven with door closed for 6 hours.(This prevents cheesecake from cracking.) Chill in refrigerator until serving.
