This recipe is from my mother-in-law's collection. All of the grandchildren called her "Nana". She raised a family of 7 children, so with their off-spring, holidays were pretty crowded, at their house. Granted, this is made from a cake mix, but was a quick, easy dessert for a overworked mom, that was enjoyed by all.

Ingredients For nana's pineapple upside down cake

  • vegetable cooking spray
  • 4 Tbsp
    butter
  • 2/3 c
    brown sugar, packed
  • 1 can
    pineapple slices, 5-7 drained
  • 1 jar
    maraschino cherries
  • 1 box
    yellow or white cake mix for one layer (like jiffy) or 1/2 of a regular size cake mix

How To Make nana's pineapple upside down cake

    Preheat oven to 325 degrees. Spray a sturdy 8 to 9 inch cake pan with cooking spray.

    Melt butter in pan. Add brown sugar, mixing well. Then, place as many drained pineapple slices, in pan, that will fit. Approximately 5-7. In the center of each slice, insert a cherry.

    Prepare cake mix as package directs. If, using half of a cake mix, don't forget to adjust your ingredients from the cake mix package. Pour cake batter over pineapple topping, and bake in preheated oven for approximately 30 minutes. Until, golden brown. Remove from oven, and let stand for 15 to 20 minutes. Run a knife around the inside edge of the pan, before inverting on a plate. Carefully remove pan, leaving cake inverted on the plate.
