The whole name of this recipe is: MY MOM Didn't Like You Anyway, CUPCAKE (Well, she didn't...get over it.) I got this off the net somewhere, from Erin Bolgar, who apparently has a web site, cookbook...etc. if I find it and get the info. I'll post it. There's also an icing recipe accompanying this called: MOM'S BEST EVER ICING, which I will include. Well, I hope they're good!!!

  • 2 cups sugar
  • 3/4 cup cocoa
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 3/4 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup buttermilk
  • 1 cup boiling water
  • MOM'S BEST EVER ICING
  • 1/4 cup butter, softened
  • 2 tablespoons cocoa
  • 2 tablespoons hot water
  • 2 cups icing sugar

  • Step 1
    MY MOM Didn't like you anyway, CUPCAKE Well, she didn't...get over it.
  • Step 2
    Preheat oven to 350 degrees F. Prepare muffin tins.
  • Step 3
    In a large bowl sift together dry ingredients.
  • Step 4
    Add eggs, vegetable oil, vanilla and buttermilk.
  • Step 5
    Beat with a mixer on medium speed for a couple of minutes until smooth and silky.
  • Step 6
    Stir in boiling water until blended.
  • Step 7
    Fill prepared muffin tins with batter.
  • Step 8
    Bake for 22 - 25 minutes.

    MOM's BEST EVER ICING
  • Step 10
    Combine the butter, cocoa and hot water.
  • Step 11
    Gradually add the icing sugar until smooth and creamy.
  • Step 12
    Ice cooled cupcakes and enjoy!
