Ingredients

2 c cooked oatmeal
1 c brown sugar
1 c sugar
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla extract
1 tsp cinnamon, ground
1 tsp ground nutmeg
2 eggs
1/2 c oil
1 1/2 c flour
3/4 c raisins
pecans optional

Kimi's Notes:

This cake has been in our family for a long time. I really can't tell you where my mom found it, but it is easy and the results are amazing. Mix everything together and bake. A good spoonful of whipped topping completes it.

 

Directions

PREHEAT OVEN TO 375f. Cook old fashioned oats as directed on box. Allow to sit to cool just a bit. Mom said cold was the best way. In a large bowl mix by hand all the ingredients. Pour into a greased square pan. Bake for 40 minutes.

Sounds great, Kimi. I love oatmeal in just about anything. Especially good in cakes.

I think you good use any kind...but we have always used old fashioned...try them out..and let me know.

Thanks, I will this winter... still in the hundreds here so I not baking anything till it cools off , this will be one of the first I try tho.

My oatmeal had raisins and cran-raisins in it. I added a couple tbsp of black strap molasses and I loved the flavor it added.
