My Mama's Oatmeal Raisin Cake

This cake has been in our family for a long time. I really can't tell you where my mom found it, but it is easy and the results are amazing. Mix everything together and bake. A good spoonful of whipped topping completes it.

Ingredients

2 c
cooked oatmeal
1 c
brown sugar
1 c
sugar
1 tsp
baking soda
1/2 tsp
salt
1 tsp
vanilla extract
1 tsp
cinnamon, ground
1 tsp
ground nutmeg
2
eggs
1/2 c
oil
1 1/2 c
flour
3/4 c
raisins
pecans optional

Directions Step-By-Step

PREHEAT OVEN TO 375f. Cook old fashioned oats as directed on box. Allow to sit to cool just a bit. Mom said cold was the best way. In a large bowl mix by hand all the ingredients. Pour into a greased square pan. Bake for 40 minutes.

This a really old recipe from my mom. I am pretty sure my grandma made it too. Not sure on that. Great warm and with whipped cream.

My mom always used whipped cream. You could use a cream cheese frosting.

What kind of icing/frosting do you make for this cake? My husband's grandmother used to make a raisin oatmeal cake and he thought it had a white frosting, but did not know exactly what it was.
