2 c
all purpose flour
2 c
white sugar
1 tsp
baking powder
1 tsp
baking soda
1 tsp
salt
1 tsp
cinnamon
3 c
shredded baby carrots (ready to eat baby carrots are sweeter)
1 c
vegetable oil
4
large eggs

CREAM CHEESE FROSTING

3 oz
cream cheese
1/4 c
butter or margerine
2 c
sifted powdered sugar
1 tsp
vanilla
1/2 c
chopped pecans or walnuts

Directions Step-By-Step

Grease and flour 13x9 pan and preheat oven to 325.

First: Cream together sugar, eggs, oil, vanilla, and carrots.

Second: Add remaining dry ingredients, use sifter. Mix well for 2 minutes.

Third: Pour into greased 13x9 pan at 325 for about 55 minutes, or until wooden toothpick inserted comes out clean.

Beat together frosting ingrediants, EXCEPT NUTS, with handmixer (cream cheese and butter should be softened) SIFT POWDERED SUGAR.
Frost cake when thoroughly cooled and sprinkle chopped nuts on top.
