This is a combination of 2 of my favorite cake recipes. This is what happened. I was making one cake- went to tend to one of my children - this is when they were small- and while I was gone the breeze from the kitchen window must have turned the pages- being that the recipe were very similar -I didn't notice the difference until I went to put it together in the cake pan. So I just went ahead and made it following the wrong directions. It turned out great - now it is a staple recipe for Halloween- my .... ...BOO-BOO Coffee Cake ...

Ingredients For my boo boo coffeecake

  • CAKE:
  • 18 oz
    duncan hines orange cake mix or yellow cake mix
  • 4 oz
    pkg. vanilla instant pudding mix,dry
  • 1/4 c
    soft butter or margarine
  • 1 1/3 c
    water
  • 2 lg
    eggs
  • FILLING:
  • 3 oz
    pkg.orange jell-o
  • 2 Tbsp
    graham cracker crumbs
  • 1/4 c
    butterscotch chips
  • 2 Tbsp
    flaked coconut
  • 2 Tbsp
    chopped nuts
  • GLAZE:
  • 1 1/2 Tbsp
    milk
  • 1 Tbsp
    light corn syrup
  • 1 1/2 c
    powdered sugar

How To Make my boo boo coffeecake

  • 1
    Heat oven to 350^. Cake: Combine all ingredients in a large mixer bowl; mix 2 minutes at medium speed. Reserve 1 cup of batter; spread remainder evenly in heavily sprayed 10-12 bundt pan. --- Filling: Blend reserved batter, jell-o (dry), graham crumbs,chips, coconut and nuts together and spoon in ring onto batter in pan. Using a spoon,fold jell-o mixture gently into batter. Go around pan twice; avoid scraping sides of pan. Bake for 40-50 minutes, or until cake tests done. Cool in pan 25 minutes; invert onto serving plate. --- Glaze: Combine ingredients and spoon over cooled cake.
