This recipe is from a true Southern Lady. Made for our family in my childhood days and I'm sure many more times.. super yummy and a great way to get that 'apple a day'. The whole family loves this wonderful taste of my childhood in the south!

Ingredients For ms. geraldine's fresh apple cake

  • 1 1/4 c
    vegetable oil
  • 2 c
    white sugar
  • 3 lg
    eggs
  • 1 tsp
    baking soda
  • 1 tsp
    salt
  • 3 c
    all purpose flour
  • 3 c
    peeled chopped apples
  • 1 c
    chopped pecans
  • 2 tsp
    pure vanilla extract
  • TOPPING
  • 1 c
    brown sugar, firmly packed
  • 1 stick
    unsalted butter
  • 1/4 c
    half and half
  • 1 tsp
    pure vanilla extract
  • 1 c
    powdered sugar
  • 1 c
    finely chopped pecans

How To Make ms. geraldine's fresh apple cake

    Preheat oven to 250 degrees. Butter and flour large tube or bundt pan. Set aside.

    Sift together salt, baking soda and flour.
  • 3
    In mixer bowl, blend oil and sugar well.
  • 4
    Slowly add dry sifted ingredients into oil and sugar mixture. (Batter will be stiff at this point)

    Whisk eggs together lightly and add to batter.

    Reduce speed on mixer and stir nuts and vanilla into batter.

    gently stir in chopped apples
  • 8
    Pour batter slowly into prepared pan, shifting carefully so that batter is even .

    Bake for 1 1/2 hours @250 degrees

    Remove from oven. Cool. Invert on to cake plate. Add praline topping if desired

    Bring brown sugar, butter and milk to a boil in a heavy saucepan over medium heat Whisk constantly as it boils for 1 minute Remove from heat

    Stir in Vanilla

    Gradually add in powdered sugar beating with hand mixer until smooth. Mix gently for about 5 minutes until slightly thickened and cooled.

    Spoon over cooled cake Sprinkle with chopped pecans
