Ingredients

1 c butter
2 c sugar
4 eggs
1/2 c buttermilk
1 tsp baking soda
3 1/2 c all purpose flour
1 lb dates, pitted & chopped
1 lb orange slice candy, chopped
2 c pecans, chopped
1 1/3 c coconut
2 Tbsp orange zest
1 c orange juice
2 c confectioners' sugar

Vicki's Notes:

My Mom made this for me every year between Thanksgiving and Christmas.

 

Directions

Preheat oven to 300 degrees F. Lightly grease and flour one 10 inch tube pan.

In a mixing bowl, cream margarine and granulated sugar until smooth. Add eggs one at a time, beating well after each addition.

Dissolve baking soda in buttermilk and add to the creamed mixture.

Place flour in a large bowl and add dates, orange slices, and nuts. Stir to coat each piece.

Add flour mixture and coconut to creamed mixture. This makes a very stiff dough, so it will be necessary to stir with a wooden spoon.

Pour batter into the tube pan. Bake for 2 hours.

As soon as cake comes from oven, combine the orange juice and confectioners sugar and pour over hot cake. Let stand in pan overnight.

OMGoodness!!! I have been looking for this one for years because I lost mine! It was the fav of my deceased husband.....MANY THANKS for posting!!!
He liked this instead of the usual Christmas fruitcake. :-)

So glad you found this recipe. My Mom has passed as well, so now I make this for myself.
I wanted to tell you that I had to make a change on the cooking time.
In step 5 it says cook for 2 1/2 to 3 hrs.
It is 2 hrs. at 300 degrees.
If you want to cook it slower, you can cook it on 250 degrees for 2 1/2 to 3 hrs.

do you store yours in fridge i know i do mine and it keeps forever

we wrap it in foil and store in fridge oh so yummy may try to make one this year
