So easy to make, yet so delicious. My mom would make this for my brother's birthday, and it was always gobbled up fast.

Ingredients For mom's best carrot cake

2 csugar

1-1/2 coil, i used canola oil

4 lgeggs

2 tspbaking soda

2 call purpose flour
-
2 tspcinnamon
-
1 csweetened, flaked coconut

3 cgrated carrots
-
1 cchopped walnuts
-
18 oz pkg reduced-fat cream cheese, softened

2 stickbutter, softened
-
1 tspvanilla

4 cpowdered sugar
How To Make mom's best carrot cake

1Heat oven to 350. Spray 2 8 or 9" cake pans w/ cooking spray. In lg bowl, beat sugar, oil, eggs, baking soda, flour, cinnamon, coconut, carrots and walnuts until combined.

2pour batter evenly into pans. Bake 45-50 mins, or until a toothpick inserted in center comes out clean. Let cool.

3In another lg bowl, beat cream cheese and butter until smooth. Beat in vanilla. Gradually add powdered sugar until combined. frost cake.
