1 bx duncan hines coconut cake mix
2 can(s) duncan hines vanilla frosting
1 1/2 c coconut, shredded
pina colada drink mix

I made this for my moms 82nd birthday. She's not much on cake, but loves coconut cake.

 

Directions

1
Prepare cake as directed on box. In lieu of water use the pina colada drink mix. Bake according to package directions. Cool pans on racks after 10 min.; invert onto a baking rack. Frost when completely cooled then spread coconut in between layer and all over the cake.

Looks Great and sounds fantastic, Kimi. . . Me, I would skip the Frosting and use a less sweet version, like Cool-whip then sprinkle with toasted coconut.
I bet she really enjoyed that treat.

oooh Freda, how about a little frosting whipped into the cool whip. It would lighten up the frosting but still have a bit of sweetness.

I would never have thought of subbing Pina Colada drink mix for the water. Great idea!! Thanks so much for sharing your recipe, Kimi. You have inspired me to try it in the Pineapple Cake Mix, too. I get so much inspiration from the cooks at JAP.

My favorite layer cake is Coconut with Pineapple Filling. I can't wait to use the Pina Colada drink mix the next time I make it. Of course, I don't trust myself to have the cake "hanging out" at my house. I'll have to bake it and take it to be consumed someplace else!!!!

The frosting I got was whipped, but didn't say it. I love the idea of adding cool whip to the frosting. Great tip!!

I love coconut cake!! My mom used to make a coconut cake with a fluffy 7 minute frosting from scratch. I have lost the recipe and she can't find hers, so I will definitely be trying out this recipe. Thanks for sharing, you made my day :-)

You can go on line a look up Betty Crockers 7 min Frosting. My mom used their recipe for years. I did too, but now I just get canned cause it's easier. I do make my German Chocolate from scratch.
