Moist & Delicious Carrot Cake

This recipe was given to me by a friend. He said his mom used to make this and it is DELICIOUS.

Ingredients

2 c
white sugar
4
eggs
1 1/2 c
canola oil
2 1/2 c
sifted white all-purpose flour
1 c
chopped walnuts (optional)
2 tsp
baking soda
2 tsp
cinnamon, ground
2 tsp
salt
2 c
shredded carrots
1 c
crushed pineapple (drained)

Directions Step-By-Step

Preheat oven to 350 degrees. Grease and flour a 9 X 13 pan.

Mix all ingredients and pour into prepared pan. Bake for one hour.

FROSTING:
1 package cream cheese
3 cups powdered sugar
1/4 cup butter or margarine

Mix together until smooth consistency and frost cake. Refrigerate until ready to serve.
