After leaving Starbucks with my daughter and our Mocha Coconut Frapachinno we came up with this cupcake recipe. It is hit with family and friends.

Ingredients For mocha coconut cupcake

  • 1 box
    german chocolate cake mix
  • 3 Tbsp
    espresso powder, instant
  • 1/2 Cup
    shredded coconut
  • 1/2 Cup
    toasted coconut
  • carmel topping
  • chocolate topping
  • 1 tsp
    coconut extract
  • buttercream frosting

How To Make mocha coconut cupcake

  • 1
    Prepare cake according to package directions except add espresso powder to water (called for in the mix) Add coconut. Bake in cupcake papers for 18 minutes at 350.
  • 2
    Make the standard buttercream frosting and add 1 tsp coconut extract. Frost cupcakes and drizzle with carmel and chocolate sauce and sprinkle with toasted coconut.
