CLASSIC MISSISSIPPI MUD CAKE RECIPE (SALLYE)

This is an authentic Deep South recipe. It is very labor intensive.

Ingredients

CAKE

2 c
all purpose flour
2 c
sugar
1 tsp
baking soda
1/2 tsp
salt
2 stick
butter
1/3 c
cocoa powder
1 c
water
1/2 c
buttermilk
2 large
eggs, slightly beaten
1 tsp
vanilla extract
8 oz
mini marshmallows

FROSTING

1 stick
butter
1/3 c
cocoa powder
1/2 c
buttermilk
16 oz
confectioners sugar
1 tsp
vanilla extract
1 pinch
salt
3/4 c
chopped nuts

Directions Step-By-Step

Preheat oven to 350º

Lightly grease 9x13 baking pan

CAKE DIRECTIONS:

Sift flour, sugar, baking soda and salt into a medium mixing bowl. Set aside

Melt butter in small sauce pan; when melted, add cocoa and water and bring to a boil

Add boiling cocoa mixture to dry ingredients and stir until just combined

Add buttermilk, eggs, and vanilla and stir until smooth

Pour into greased pan and bake 35-40 minutes until toothpick inserted in center comes out clean

Remove from oven onto cooling rack
!!DO NOT REMOVE CAKE FROM PAN!!

Sprinkle marshallows evenly onto hot cake

FROSTING DIRECTIONS:

Melt butter in medium saucepan; when melted add cocoa powder and buttermilk

Bring to boil, then remove from heat

Add powdered sugar, vanilla and salt stirring until very smooth

Pour over marshmallows on hot cake

Sprinkle with nuts

This cake is best served warm with a big old scoop of Blue Bell Homemade Vanilla Ice cream

Make this for special occasions as each slice contains a “gazillion” calories
