These mini loaves are so good and just the right size for gift baskets. I make them each year and add them to our sons' gift baskets.

Ingredients For mini eggnog loaves

2 1/4 call-purpose flour

2 1/2 tspbaking powder

1/2 tspsalt

1/2 tspgound cinnamon

1/2 tspground nutmeg

2eggs
-
1 ceggnog
-
3/4 csugar
-
1/2 cmelted butter
-
2 tspvanilla extract
-
2 tsprum extract
How To Make mini eggnog loaves

1In a large bowl, combine the flour, baking powder, salt, cinnamon and nutmeg. In another bowl, beat the eggs, eggnog, sugar, butter and extract; stir into the dry ingredients just until mositened.

2Pour into three greased mini loaf pans. Bake at 350° for 30 to 35 minutes or until a toothpick inserted near the center comes out clean.

3Cool for 10 minutes before removing from pans to wire racks.

4Note: If you don't want to do the mini loaf pans you can put it in a standard size one.
