Ingredients

CAKE:
1 white cake mix
1/2 c flour
1 - 10 oz frozen margarita mix, thawed and undiluted
3 egg whites
1 egg
1 Tbsp tequilla
3 Tbsp vegetable oil
1 Tbsp lime zest, if desired
FROSTING:
1/4 c butter
4 oz pkg cream cheese
2 Tbsp lime juice
2 Tbsp tequilla
3-4 c powdered sugar
course sea salt
1 Tbsp lime zest for garnish, if desired

Wendy's Notes:

I like to experiment and try different things...and this one turned out rather nicely...with help from Key Lime(Nancy) a member on here, whom pointed me in the direction of a key lime frosting I was in search of...and then I came across this cake recipe and had to make some fun cupcakes for my baking business!
When I serve these, I will sprinkle with a lil course sea salt. MMMMMMmmmm
BTW these can easily be made without the tequilla and still have great flavor because of the frozen margarita mix.

 

Directions

CAKE: In a large mixing bowl combine cake mix, flour, margarita mix, egg whites, egg, tequilla and oil. Stir in zest if desired... :)

Place cupcake liners in cupcake pans and fill 2/3 full and bake at 350 for 17-20 min

FROSTING: cream together butter and cream cheese, add lime juice, tequilla and powdered sugar. Mix until creamy...Frost cooled cupcakes and garnish with course sea salt and lime zest if desired.

For more kick...when you remove cupcakes from oven, poke tops with toothpick, with pastry brush, brush tops with tequilla...then cool and frost. ;)

HINT: I say fill them with some type of cream cheese filling mixture with the margarita mix. YUM!

Another cute idea..add a bar drinking straw (cut down to size) to the top of cupcake sticking out..it would look so cool! We need to get a business going girly..can you move over here in Michigan..lol!

Not an actual straw Lynn, but some sort of stick candy that looks like a straw, like an apple stick or something like that. Huh?

ME too! And chocolate malt cupcakes...very cute, they look like a soda fountain drink that way.

I would use whipping cream..chocolate shavings and stemmed maraschino cherries. One huge dollop in the center Or smaller dollops around the edges of the cake.

Are you baking for a customer?? You are busy lady, I see..I am happy for you, hon!! :)

Lynn, now you know if ANYONE is going to move (back) to MI it would be ME! lol Also, I was going to ask you, do you take a bite of the scrumptious cupcake and then do a tequila shooter? Salt. Lick. Salt. Swig. Bite lime/lemon. ;-)))))
