This is a recipe you can take and add just about anything you like. To me it's easier because I have to admit, I cannot make pancakes on a skillet!!!! The one thing I think I just don't do to my own liking, so this is a simple way of me avoiding the whole skillet/griddle thing. I have added, bananas, pecans, blueberries, strawberries, raspberries, sausage crumbles, chocolate chips and bacon. Even some with cheese. What is great too is that you can start this off and make a little of whatever pancakes for each individual person in your home, because in my house, not everyone likes or wants the same thing. These are also great just plain with Maple Syrup.

Ingredients For maple pancake muffins

  • 1 c
    all purpose flour
  • 1 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/4 tsp
    salt
  • 2 Tbsp
    sugar
  • 2/3 c
    buttermilk
  • 1
    egg
  • 2 Tbsp
    maple syrup
  • 2 Tbsp
    melted butter
  • ADD IN SUGGESTIONS
  • bananas
  • chocolate chips or any type of chips
  • sausage crumbles or links
  • bananas
  • blueberries/strawberries/raspberries
  • bacon
  • nuts
  • make your own combo!

How To Make maple pancake muffins

  • 1
    Preheat oven to 350 degrees. Generously grease a 24 cup mini muffin pan with non-stick spray.

    Combine flour, baking powder, baking soda, salt and sugar in a medium bowl. Sift together with a wire whisk.

    Add wet ingredients to dry ingredients and stir with a spoon until combined.
  • 4
    Bake for 8-9 minutes. (Longer if doing 12 regular size muffins)
