Mamma Daisy's Fallen Cake

This was my grandmother's recipe. I found it in my mother's recipe box, which came to me after she passed away. I've never made it. I'm not sure if the margarine is essential to the recipe turning out right. I think I'll try it with butter and see what happens. The recipe card didn't specify what size pan to use, but I seem to recall my mother baking it in a fairly large cast iron skillet.

Ingredients

2 stick
margarine
2 c
sugar

medium eggs
1 pinch
salt
2 c
flour, sifted three times
1 tsp
pure vanilla extract

Cream sugar and margarine together.

Add salt to flour; add flour and eggs alternately to margarine/sugar mixture, mixing until blended after each addition.

Add vanilla; mix well.

Bake for 1 hour at 300 degrees.
