Ingredients

MUFFINS:

1 c
butter, softened
1/2 c
granulated sugar
1 large
egg
1 tsp
vanilla
1/2 tsp
almond extract
2 c
all purpose flour

MACAROON FILLING:

2 large
eggs
1/2 c
granulated sugar
1 c
finely chopped blanched almonds
1 tsp
almond extract
1/2 c
flaked coconut, chopped fine

Directions Step-By-Step

Muffin mixture:
In a large bowl, cream butter and sugar. Beat in eggs, flavorings and flour. Drop by teaspoon into sprayed, mini muffin cups.
Press dough on bottom and up sides of cups. Chill
Fill cups with Macaroon Filling. Bake for 25-30 minutes at 325^ . makes about 50 mini muffing.

Macaroon Filling:
Beat eggs until light and foamy. Gradually beat in sugar until well blended. Fold in almonds and coconut and extract.
These freeze well.
