Ingredients
- 3/4 cup sugar
- 2/3 cup butter, room temperature
- 2 x large eggs
- 1 tablespoon lemon zest
- 1 1/2 cups self-rising flour
- 1/2 cup milk
- 1 1/4 cups confectioners' sugar
- 1/4 cup lemon juice, fresh
- GARNISH:
- confectioners' sugar
How To Make lemon drizzle bars

Step 1Preheat oven to 350 degrees F. Spray a 8" square baking cake pan with bakers joy & line bottom with parchment paper.

Step 2In standing mixer with paddle add sugar, butter & eggs; beat on medium high until smooth & fluffy, 6 minutes.

Step 3Add zest, flour & milk; fold well. Pour into pan & bake 35 - 45 minutes until golden brown & firm to touch. Cool slightly on wire rack.

Step 4Meanwhile cake is cooling, in a small pot add confectioners' & lemon juice & heat over medium low heat; stirring until sugar dissolves, 4 minutes.

Step 5Prick warm cake with wooden handle of spoon all over & pour hot lemon syrup over evenly letting it soak into cake. Cool completely in pan, 1 hour.

Step 6TO SERVE: Turn cake onto serving platter, cut into 12 pieces & dust with confectioners'.
