Kimi's Story

I found this recipe on Cooks.com. It is so delicious with the combination of coconut and lemon. The glaze is tangy and a lemony delight.

Ingredients

3
sticks of butter
3 c
sugar
3 c
flour
6
eggs
1/4 tsp
salt
1 tsp
baking soda
1 c
evaporated milk
4 Tbsp
lemon juice, fresh or bottles lemon juice
1 c
flaked coconut
GLAZE
2 c
powdered sugar
enough lemon juice to make a glaze.
zest from 1 lemon

Directions Step-By-Step

Preheat oven to 325f. Spray either bundt pan or 3 8-in loaf pans.

In mixing bowl cream soften butter and sugar. Add flour alternately with eggs. Add salt & baking soda. Pour in milk. Add in lemon juice. Fold in coconut.

Bundt pan: bake 1hr 15 and loaf pans 1 hr. Check loaf pans after 45 min.

This is SO good. Both the lemon and coconut flavors are subtle, even when I added way more than the 4 tbsp of juice. This makes the lemon frosting important. What I love most is the butteriness of the cake. Definitely a pound cake! I did it in the bundt pan and it practically filled it - made a big cake. And as usual, hubby and I will be eating the whole thing. =) Next time, I'll take it to a pot luck and enjoy the raves. Thank you!!

I always add more lemon than it calls for...Use lemon extract along with fresh squeezed or bottle.
