first, make the ganache. put chopped chocolate into a mixing bowl. in a small saucepan heat the cream until bubbles begin to form around the edges. remove from heat immediately and pour over the chocolate. whisk until smooth. let cool to room temperature, and slightly thickened. then refrigerate until firm. using a round spoon or small melon baller scoop out small balls of the ganache. with damp hands roll into balls, cover with plastic wrap and store in freezer until needed.
to make the cupcakes, add the dry pudding mix to the cake mix then add other ingredients according to package directions. fill paper lined cupcake about 1/4 way with the cake mix, place one chocolate ganache ball on top, then fill to about 3/4 full with cake mix. bake according to package directions for cupcakes. may be slightly messy if eaten warm, so serve on a warm serving plate, with ice cream or whipped cream.
