Ingredients For key lime cupcakes w/ meringue

  • CUPCAKES:
  • 2 stick
    butter, room temperature
  • 1 c
    sugar
  • 2 c
    self rising flour
  • 1 sm pkg
    instant vanilla pudding mix, dry
  • 4 x lg
    eggs
  • 1 tsp
    pure vanilla extract
  • FILLING:
  • 1/3 c
    key lime juice
  • 1 - 14 oz can
    sweetened condensed milk
  • MERINGUE:
  • 3 x lg
    egg whites
  • 1/4 tsp
    cream of tartar
  • 1/3 c
    sugar
  • DECORATION:
  • key lime fruit slices candy

How To Make key lime cupcakes w/ meringue

    CUPCAKES: Preheat oven to 350 degrees F. Place 18 paper liners in muffin pans. In a standing mixer, place all cupcake ingredients & beat until smooth & pale, about 3 minutes. Spoon batter into muffin pan & bake 20 minutes or until golden brown. Remove from oven & let cool in pans for 5 minutes. Then transfer to wire rack to cool completely.

    FILLING: Combine juice & milk in a small bowl. Remove the tops of each cooled cupcake & hollow out a small hole (I have a gadget that takes a hole out of the middle of the cupcake without ruining it - still looking for that link). Take pastry bag fitted with a large round tip or spoon filling into the hole & replace with each cupcake top.

    MERINGUE: In a standing mixer with whisk, beat whites & tartar until soft peaks form. Add sugar & beat for 1 more minute. Scrape down & beat another minute. Increase oven to 450 degrees F. With pastry bag fitted with large star tip, pipe meringue on top of cupcakes. Bake 5 minutes or until golden brown. Let cool slightly & decorate with a key lime fruit slice candy.
