The lady next door, when I was little, was like a mother to me. Her name was Parthenia. After I was married she still stayed close. Had my husband and I over many times for dinner. This was one of her recipes and one of our favorites. Thanks Par!

Ingredients

1 1/3 c
sugar
2 c
all purpose flour
1/2 tsp
salt
1 - 3 oz
pkg of lime jello
1/2 tsp
baking soda
1 tsp
baking powder
5
eggs
1 1/3 c
canola oil
3/4 c
orange juice, unsweetened
1/2 tsp
vanilla
1 tsp
lemon extract
1/3 c
key lime juice
1/3 c
powdered sugar
whipping cream, whipped for garnish
thin lime slices, for garish

Directions Step-By-Step

Preheat oven to 350. Place dry ingredients into a mixing bowl.

In seperate bowl, add eggs and oil. Mix till creamy. Add orange juice, vanilla, lemon extract and dry ingredients. Beat till well blended.

Pour batter into a greased and floured 9x13 pan. Bake for 35-40 minutes. Remove cake from oven and let stand in pan 15 minutes or until just about cooled.

In small bowl mix lime juice and powdered sugar.

Poke holes in cake with a fork. Drizzle all over with the lime juice and powdered sugar mix. Cover and refrigerate.

To serve, cut into squares and top with whipped cream and lime slices. You can use Cool Whip in place of whipped cream.
