This is my "go to" cake to make for potlucks and other church gatherings. It is supper moist and everyone loves it.

Ingredients

1 stick
butter
1 c
quick cooking oats
1 1/2 c
boiling water

PUT ABOVE INGREDIENTS IN BOWL AND LET SIT FOR 20 MINTUES.

1 c
packed brown sugar
1 c
granulated sugar
2
eggs
1 1/2 c
all purpose flour
1/2 tsp
baking soda

MIX ABOVE INGREDIENTS WELL AND ADD OATMEAL MIXTURE WHEN READY

1 stick
butter
3/4 c
granulated sugar
1 tsp
vanilla extract
1/3 c
half and half
8-10 oz
packed flaked coconut

Step-By-Step

1Put stick of butter, quick oats and boiling water into a bowl and let sit for 20 mintues

2While above mixtures is sitting you can mix the remaining ingredients together. Add oatmeal mixture after it has sat for 20 mintues.

3Coat a 9x13 pan with non-stick cooking spray and pour batter in.

4Bake at 350 degrees for 30-40 mintues. Check with toothpick to check doness.

5Afer cake has cooked...in a sauce pan boil butter, granulated sugar, vanilla, half and half and coconut until sugar is melted.

6Spread boiled mixtures over cake and broil until coconut is browned. WATCH CAREFULLY!!! It will brown quickly.
