This is a recipe I received from my daughter in law from her grandmother. It is the best carrot cake I have ever had and is so moist and fresh tasting.

Ingredients

1 1/2 c
oil
2 c
sugar
4
eggs
2 c
sifted flour
1 tsp
cinnamon
2 tsp
baking powder
1 tsp
salt
3 c
grated carrots
1 c
chopped nuts
1 c
coconut

Step-By-Step

1Cream together oil and sugar. Shift dry ingredients and add to oil/sugar mixture. Fold in carrots, nuts and coconut. Pour into greased and floured 9x13 cake pan.

2Bake at 350 degrees for 1 hour.

3Frosting:

Mix together 6 oz powdered sugar, 1/2 tsp vanilla and 1/2 stick softened butter.
