This easy ice cream cake is perfect for occasions when you want a dessert to go with a specific color scheme. The original cake I ate years ago was at a rehersal dinner. The bride's colors were pink and white. Strawberry ice cream was used to match that color scheme. Since then, I have used food coloring and vanilla ice cream when I have needed to coordinate with specific schemes. This cake is just plain good with whatever your favorite flavor ice cream is!
Let the ice cream soften to spreading consistency. Stir in food coloring if desired. Cut the cake in half, horizontally. "Ice" the cake with the softened ice cream. Put cake into the freezer until ice cream hardens then cover the cake and leave in freezer until time to serve.
