Hummingbird Cake

This cake is my all time favorite cake of all time. I found this cake at the Whole Foods store when they made them in cupcake form. Which I know that you can probably make it into cupcakes as well. But I often get this cake at the Whole Foods store for my birthday.

Ingredients

CAKE

3 c
all purpose flour
2 c
granulated sugar
1 tsp
baking soda
1 tsp
cinnamon
1/2 tsp
salt

eggs,beaten
3/4 c
vegetable oil
1 3/4 c
mashed bananas
1 can(s)
pineapple, crushed with juice (8oz can)
1 c
chopped pecans
1 1/2 tsp
vanilla extract

FROSTING

1 pkg
cream cheese, room temperature (8oz)
1/2
butter, at room temperature (1 stick)
1 lb
confectioner's sugar,sifted
1 tsp
vanilla extract
1/2 c
chopped pecans

Directions Step-By-Step

Preheat oven to 350. Grease and flour three 9 inch round cake pans.

For the cake,in a mixing bowl, stir together the flour,sugar,baking soda,cinnamon and salt. Add the eggs and oil and stir just until the dry ingredients are moistened. Do NOT beat. Stir in the banana,the pineapple and its juice, the pecans and the vanilla. Divide the batter among the prepared pans and bake for 23 to 28 minutes or until a wooden pick inserted int eh center comes out clean. Cool the cake layers in pans for 10 minutes, then turn them out onto a rack and cool completely.

While the cake cools, make the frosting: In a bowl, blend together the cream cheese and butter. Gradually add the confectioner's sugar, beating until light and fluffy. Beat in the vanilla. Stir in the pecans or reserve them to sprinkle over the frosted cake*. Fill and frost the cake.

*In all honesty, I prefer that you do not mix the pecans into the frosting but just sprinkle them on top of the cake itself.
