This is a great cake. It reminds me of banana bread with cream cheese icing. YUM!

Ingredients

2 c
sugar
3 c
plain flour
1 tsp
cinnamon
1 tsp
baking soda
1 tsp
salt
3
eggs
1 1/2 c
vegetable oil
2 c
mashed bananas
1 1/2 tsp
vanilla
2 c
chopped pecans
1 can(s)
8 oz. crushed pineapple (undrained)
1 pkg
8 oz. cream cheese
1 stick
margarine
1 box
powdered sugar
1 tsp
vanilla

Directions Step-By-Step

Sift together in mixing bowl the first 5 ingredients. In another bowl, mix together the other ingredients. Pour second mixture over the first mixture and stir; DO NOT BEAT. Pour into greased tube pan or Bundt pan. Bake at 350 for 1 hour and 10 minutes or you can divide the batter into 2 nine inch greased pans and bake 350 for 40-45 minutes (check the center with a toothpick and if it comes out clean, it's done). Remove from oven and let the cake cool on a cooling rack for about 10 minutes, then turn it over from the baking pan to a cake plate and let it cool completely, then frost. You may wanna top with some pecans for decoration, as I've done.

HUMMINGBIRD ICING:

Cream margarine and cream cheese thoroughly, then add sugar and vanilla; cream together until smooth. Spread on cool cake.
