When I first made this, I wasn't sure how pineapple & banana would taste together. OMG! THE BEST THING I HAVE EVER ATE! Now everytime I make this....it is gone in no time. Never a leftover. :(

Ingredients For hummingbird cake

- CAKE:

1 boxyellow pudding cake mix

1 lg boxinstant banana pudding mix, dry

1 - 8 oz canpineapple, crushed, undrained

3 smbananas, peeled & mashed (about 1 c)

1/2 cwater
-
1/2 cvegetable oil
-
3 x lgeggs
-
1 tsppure vanilla extract
-
1 tspcinnamon, ground
- CREAM CHEESE FROSTING:
-
1 - 8 oz pkgcream cheese, room temperature
-
1 stickbutter, room temperature
-
3 3/4 cconfectioners' sugar, sifted
-
2 tsppure vanilla extract
- GARNISH:
-
1/2 cpecans, toasted
How To Make hummingbird cake

1CAKE: Preheat oven to 350 degrees F. Place rack in center of oven. Lightly spray 2 9" round cake pans with bakers joy spray. Set aside.

2In a stand mixer, add cake mix, dry pudding, pineapple with it's juices, bananas, water, oil, eggs, vanilla & cinnamon. Blend on low speed 1 minute. Stop & scrap down sides. Increase speed to medium & beat for 2 more minutes. NOTE: Batter should look thick & fruit well blended. Pour evenly into prepared pans. Place side by side in oven.

3Bake until golden brown, about 30 - 32 minutes. Remove from oven & let cool on wire racks for 10 minutes. Invert onto racks & out of pans & let cool 30 minutes more.

4Meanwhile, make frosting.

5CREAM CHEESE FROSTING: In stand mixer with whisk attachment, add cream cheese & butter. Blend on low until combined, 30 seconds. Stop machine & add confectioners' sugar, a little bit at a time on low speed until combined, about 1 minute. Add vanilla & increase speed to medium, about 1 minute more.

6Use at once. When the cake layers are cooled, place 1 layer right side up on serving platter & spread top with frosting. Place the 2nd layer on top of 1st & then spread the top & sides of the cake with frosting. Sprinkle the top with toasted pecans. Serve at once or refrigerate, uncovered until frosting sets, about 20 minutes then cover in frige for up to 1 week. Can be frozen too for up to 6 months! Thaw overnight in refrigerator.
