Humming Bird Muffins

Ingredients

2 1/2 c
sr flour
1 tsp
cinnamon
1 c
castor sugar

eggs lightly beaten
1/2 c
olive oil
1 c
walnuts (chopped)

ripe bananas (mashed)
10 oz
tin crushed pineapple in juice
icing sugar to dust
9 oz
cream cheese chopped
2 Tbsp
icing sugar
1/4 tsp
creamed honey

Directions Step-By-Step

Sift flour and cinnamon into large bowl, stir in sugar.

Add egg, oil, walnuts, banana and pineapple. Stir until combined.

Spoon mixture into muffin trays 3/4 way up the sides.
I use muffin cups inside muffin tin.

Bake 35 min until cooked.

TOPPING:
Place all ingredients into a bowl and beat until combined.
Put topping on your muffins when cooled. Decorate with toasted shredded coconut and tropical flower.
