  • TAKE YOUR CHOICE OF ADD INS: (CHOOSE ONLY 1)
  • 1 c
    applesauce, no sugar added
  • 1 can
    pop, diet
  • 1 - 15 oz can
    pure pumpkin (not pumpkin pie filling)
  • 1 c
    egg substitute
  • 1 c
    plain greek yogurt, fat free

    APPLESAUCE CAKE: Preheat oven to 350 degrees F. Combine cake mix with applesauce (or pop, pumpkin, egg substitute or yogurt) in a large bowl & add 1 C water. Whisk thoroughly & transfer to a baking pan sprayed with nonstick spray; bake in the oven until a knife inserted into the center comes out clean. (Refer to cake-mix box for pan size & approximate bake time.) Best Flavor: Yellow cake mix. It goes perfectly with the fruity taste of the sauce. The Texture: VERY moist & fluffy. A+! The Taste: AMAZING!!!! Sweet & slightly apple-y. Two YUMS up...

    DIET POP (SODA) CAKE: Preheat oven to 350 degrees F. Combine cake mix with soda in a large bowl. Whisk thoroughly & transfer to a baking pan sprayed with nonstick spray; bake in the oven until a knife inserted into the center comes out clean. (Refer to cake-mix box for pan size & approximate bake time.) Best Flavor Combo: Yellow cake mix + diet cream soda. Runners-up include lemon cake mix + diet lemon-lime soda & devil's food cake mix + diet cherry cola. The Texture: Moist & light. The Taste: Pretty darn impressive! However, if you're sensitive to the sweetener in diet soda, you may notice a slight aftertaste... especially if you use cola of any kind.

    PUMPKIN CAKE: Preheat oven to 400 degrees F. Combine cake mix with pumpkin in a large bowl. Mix thoroughly -- batter will be VERY thick -- & transfer to a baking pan sprayed with nonstick spray; bake in the oven until a knife inserted into the center comes out clean. (Refer to cake-mix box for pan size & approximate bake time.) Best Flavor: Devil's food cake mix is CLEARLY a classic choice. (Hello?! Yum Yum Brownie Muffins!) But spice cake mix... WOW. Yellow & white cake mixes, sadly, do not work as well. The Texture: Thick & dense in the BEST possible way. Brownie-like, in the case of the devil's food; the spice cake reminded us of pumpkin bread! The Taste: No one would ever guess this is guilt-free in any way. It's delicious!

(Refer to cake-mix box for pan size & approximate bake time.) Best Flavor: Egg sub is like the little black dress of cake companions; it goes well with everything. The Texture: The first time we made this, we used only 1/4 C of water; it was a little dry & dense, but it reminded us of pound cake, which isn't a bad thing. With a full cup of water, it came out light & fluffy. It had a more substantial, cake-like consistency than the applesauce & soda versions, but it wasn't quite as moist. The Taste: Good! But it's not our favorite. That one's up next...

Whisk thoroughly & transfer to a baking pan sprayed with nonstick spray; bake in the oven until a knife inserted into the center comes out clean. (Refer to cake-mix box for pan size & approximate bake time.) Best Flavor: Devil's food cake mix. Hands down. The Texture: The word "velvety" comes to mind... Super moist & decadent! Kind of like a brownie-cake hybrid. The Taste: YUMMY! Everyone who tried this loved it. There wasn't any yogurt taste at all... just pure cake-tastic deliciousness!

    PUDDING FROSTING: All you need is one sugar-free pudding snack with 60 calories or less (like the kinds by Jell-O) & 1/3 cup frosting to top an entire cake. This works great for both vanilla & chocolate frostings.

    CHOCOLATE FROSTING: 1 sugar-free chocolate pudding snack with 60 calories or less (like the kind by Jell-O) 1/3 cup chocolate frosting 2 tbsp light chocolate syrup In a medium-large bowl, combine topping ingredients. Mix thoroughly. Cover & refrigerate until thickened & cake is ready to be frosted.

    POWDERED SUGAR: When it comes to guilt-free icing for cinnamon buns, Danishes & other pastries, I turn to powdered sugar. It's super sweet, it dissolves well in liquid & a little goes a long way. Just mix 2 tbsp. powdered sugar with 1 tsp. water & a drop of pure vanilla extract. Easy peasy! That'll top a bunch of cinnamon buns, a multi-serving Danish, or about a dozen pastries.

    CRAZY-AMAZING CREAM CHEESE FROSTING: This creamy frosting tastes good on almost everything... Sweet stuff, anyway! Ingredients: 1/4 cup plus 2 tbsp. fat-free cream cheese, room temperature 2 tbsp. Splenda No Calorie Sweetener (granulated) 1/2 cup Cool Whip Free (thawed) Directions: In a medium bowl, thoroughly mix cream cheese with Splenda. Add Cool Whip, and stir well. Cover and refrigerate until chilled, about 30 minutes. Spread & enjoy! NOTE: By the way, that 2 tbsp. granulated Splenda is equal to about 3 no-calorie sweetener packets. You can also make this with 2 tbsp. granulated sugar in place of Splenda -- then each serving will have 30 calories, 5.5g carbs & 4g sugars
