Ingredients For halo cookies

  • 1 box
    angel food cake mix
  • 1/2 c
    water (strawberry, raspberry or orange pop (nehi) can also be used)
  • 1 tsp
    pure vanilla extract
  • 1 1/2 tsp
    almond extract (optional)
  • 7 oz
    shredded coconut (optional)
  • RASPBERRY OR STRAWBERRY POP (IF USING):
  • 16 oz
    raspberries or strawberries, unsweetened
  • 1/4 c
    sugar
  • 2 Tbsp
    lemon juice, fresh
  • 2 Tbsp
    orange juice, fresh
  • club soda or carbonated water

How To Make halo cookies

    Preheat oven to 350 degrees F.

    Mix well, drop by tsp onto Pam sprayed cookie sheet.

    Bake at 5 - 6 minutes depending upon your oven. Cookies will be white, if they turn brown they will be too dry. Remove from cookie sheet immediately & place on wax paper. Store in airtight container.

    JUST A THOUGHT: I wonder if using the raspberry pop & the coconut....if it would taste like Hostess Zingers.....hmmm I'll just have to find out....

    RASPBERRY OR STRAWBERRY POP: Combine raspberries, sugar, lemon juice & orange juice in 2 qt saucepan. Cook over medium heat for 7 - 10 minutes, or until raspberries are defrosted & sugar is dissolved, stirring occasionally. Process raspberry mixture in food processor or blender until smooth. Strain through fine mesh sieve into 4 C measure. Discard seeds. Use 2 Tbsp of raspberry mixture to every cup of club soda.
