This is a spiced green tomato cake and is delicious. Great way to use those tomatoes before the frost gets them.

2 1/4 c
sugar
1 c
vegetable oil or melted shortning

eggs
2 tsp
vanilla
3 c
flour
1 tsp
salt
1 tsp
baking powder
1 tsp
cinnamon
1/2 tsp
nutmeg
1 c
pecans or walnuts
1 can(s)
raisins
2 1/2 c
diced green tomatoes
coconut (sweetened and shredded)

Preheat oven to 350F

In mixing bowl beat sugar, oil or shortning, eggs, vanilla until smooth and creamy.

Sift together flour, salt, baking powder, cinnamon and nutmeg. Blend well.

Stir in pecans or walnuts, raisins, and tomatoes.

Pour in a 9X13 inch pan. Top with coconut if desired. Bake for one hour or until toothpick comes out clean.

Frost when cool with your favorite frosting or serve with whipped cream or Cool Whip.
