Green Tomato Cake

We have always had a big garden. Anyone that has ever grew tomatoes knows in the fall there is alot of those green tomatoes left. This is perfect for those. I have made it double layer and froze one layer. It freezes very well. No one will know this is green tomato and not apple.

Ingredients

2 1/4 c
sugar
1 c
melted vegtable shortening

eggs
2 tsp
vanilla
3 c
flour
1 tsp
salt
1 tsp
baking soda
1 tsp
cinnamon
1/2 tsp
fresh grated nutmeg
1 c
chopped walnuts
1 c
raisins
2 1/2 c
diced green tomatoes
1
small can angel flake coconut

Directions Step-By-Step

Preheat the oven to 350 degrees. In a mixing bowl, cream the sugar,shortening,eggs,and vanilla until smooth.Add the flour,salt,soda,and spices and stir to blend. Stir in the nuts,raisins, and tomatoes. Grease a 9 x 13 pan. Pour the batter into the pan and sprinkle the coconut on top. Bake for one hour
